2 1/2 kg pickling onions
450 g brown sugar
1 1/4 liters vinegar
15 g ground cloves
15 g ground allspice
2 tablespoons flour
2 teaspoons curry powder
2 teaspoons turmeric
Peel all the onions. Without boiling heat the vinegar and sugar and stir till sugar is dissolved.. Stir in other dry ingredients (except for onions) which have been mixed with a little cold vinegar.
Boil until it thickens.. Pat dry onions, put in jars and fill jars with the sauce. Keep three weeks before using

Homemade pickled onions

Ingredients

Main Ingredients
1 kilogram pickling onion, peeled

3 tbsp salt

2.5 ml whole coriander seeds

3 ml whole mustard seeds

3 ml black peppercorns

2 red chillies

4 cups vinegar

300 ml sugar cubes

Method

Makes 3 to 4 500ml jars.

Toss onions and salt together and leave overnight.

Rinse onions under cool running water.

Place spices, chillies, vinegar and sugar into a large stainless steel saucepan.

Simmer to dissolve sugar.

Add onions and cook for 4 minutes.

Pack onions into sterilised jars.

Add liquid to fill jars and ensure each jar has an equal number of spices and no air pockets.

Cool and seal tightly.

Pickled Red Onions Recipe

INGREDIENTS
•500g red onions (about 2 med or 1 large), thinly sliced
•1 1/2 cups white vinegar
•1/2 cup sugar
Spices
•1/2 cinnamon stick
•5 cloves
•1 bay leaf
•1 star anise
•Dash red pepper flakes
More spices (optional): Fresh ginger slices, allspice berries, oregano, garlic, cumin seeds, mustard seeds, pickle spices.
METHOD
1 Blanch red onions in a saucepan of boiling water for 2 minutes. Drain in colander.
2 While the water is heating in step 1, in a separate saucepan combine the vinegar, sugar and spices. Bring to a boil, reduce heat to simmer, cover and simmer for 5 minutes.
3 Add blanched, drained onions to the vinegar mixture. Simmer for 1 minute.
4 Transfer to a glass jar. Allow to stand until cooled. Will keep several weeks refrigerated.

Ingredients:
1 tin sweetcorn kernels (pitmielies)
1 1/2 cups cake flour
2 eggs
1/2 cup milk
100g cheddar cheese, grated (1 cup)
1 tbsp fresh parsley, chopped
2 tbsp fresh chives, chopped
5ml baking powder
salt to taste
oil to deep-fry
Method:
1.Sift the dry ingredients together.
2.Mix together the flour, eggs, milk, cheese, herbs, baking powder and salt.
3.Add the corn.
4.Heat oil in a frying pan and drop spoonfuls of the batter into the oil.
5.Cook until golden brown and puffy.

½ teel sout
2 eetl meelblom
¾ kp melk
1 teel bakpoeier
Margarine
Meng die meelblom, sout, bakpoeier en suiker saam. Klits die eiers en voeg die mielies, en melk by. Gooi die mieliemengsel by die meelmengsel en meng baie goed. Sit in gesmeerde oond bak en sit klontjies margarine bo-op. Bak by 180°C vir ongeveer 1 uur, tot toetspen skoon uitkom, en gereg gestol het. Probeer om die gereg gereed te he wanneer jy gaan bedien, want dit lyk soos ‘n soufflé, maar indien nie moontlik nie, verhit in mikrogolf voor bediening vir paar minute.

knippie sout
60ml suiker
60ml margarien
4 eiers
2 blikke roommielies
Sif meelblom, bakpoeier en sout
saam.
Meng margarien en suiker. Klits
eiers en voeg by margarienmengsel.
Gooi mielies by en meng goed.
Roer droe bestanddele by en meng
goed.
Gooi mengsel in gesmeerde
oondskottel en bak 1 uur by 180C.

Mielie en Kaas Gereg

250ml melk
250ml gerasperde kaas
25ml botter
sout en peper na smaak
250ml droe broodkrummels
250ml ingemaakte groenmielies
2 eiers geskei
Meng alles saam behalwe die eiers.
Klop eierwitte en gele apart.
Voeg eers geel van eiers by, vou wit
liggies in. Bak in gesmeerde
bak in matige oond vir ongeveer 30
minute

Bestanddele
60 ml Koekmeelblom
15 ml Bakpoeier
40 ml Suiker
2 blikke (410 g) geroomde suikermielies
60 ml Gesmelte Margarien
4 Eiers Geklits
Metode
Voorverhit oond tot 180° C.
Smeer ‘n oondvaste bak met margarien.
Meng al die bestanddele goed en gooi in bak.
Bak vir 1 uur of tot gaar.
Sny in blokke en bedien warm of koud met braaivleis. Linda Theron

4 cups flour
1 cup powdered sugar
2 cups butter
0.25 teaspoon salt

Mix all the ingredients together and roll (should look like a long sausage).Cut into circles and place on a baking sheet. Preheat the oven to 350°F and
bake for about 10 minutes. If not totally baked, bake for another 10 minutes.

1 koppie fyngemaakte pitlose dadels
(Ek sit myne sommer in die voedselverwerker)
250 ml kookwater
250 ml suiker
250 ml meelblom
½ teelepel bakpoeier
¼ koppie gekapte neute (opsioneel)
2 eiers
2 eetlepels botter
¼ teelepel sout
1 teelepel koeksoda
1 teelepel gemengde speserye of gemmer

Koek:
Kook die dadels in die kookwater en voeg koeksoda by.
Room die botter en suiker.
Voeg eiers by en meng goed.
Sif die droë bestandele en voeg dit by die eiermengsel.
Roer die dadelmengsel by.
Voeg die neute by en laastens die bakpoeier.
Gooi in ‘n gesmeerde tertbak.
Bak 30 minute by 200ºC.

Stroop:
Vir die stroop kook jy:
1¼ koppie suiker
¾ koppie water
Voeg 1 eetlepel botter by en laat effens afkoel.
Voeg ¼ koppie brandewyn en een teelepel vanielje by.
Gooi die warm stroop oor die warm tert.

Suikervrye Kaaskoek

Ek het onlangs dié kaaskoek vir my seuntjie se verjaardagpartytjie gemaak, en dit was ’n groot sukses. Niemand het my geglo dat daar geen suiker in is nie. Die koek is definitief die moeite werd vir ’n spesiale geleentheid.

(12 – 16 PORSIES)

500 g      laevet-roomkaas

750 ml      ricotta-kaas

250 ml      suurroom

250 ml      gewone jogurt

300 ml      suikerplaasvervanger

125 ml      laevet-margarien

45 ml      koekmeel

45 ml      mielieblom

4      eiers, geklits

30 ml      suurlemoensap

5 ml      vanieljegeursel

Bolaag

suikervrye      aarbeikonfyt

vars      aarbeie

Verhit oond tot 160 ºC. Spuit ’n 24 cm-losboomkoekpan met kleefwerende kossproei. Meng roomkaas,
ricotta-kaas, suurroom, jogurt, suikerplaasvervanger, margarien, meel, mielieblom en eiers tot goed gemeng. Roer die suurlemoensap en geursel by. Gooi in voorbereide pan. Bak vir 70 – 75 minute tot geset. Skakel oond af, maak deur oop en laat kaaskoek minstens 1 uur lank in die oond staan. Verkoel in yskas. Bolaag Smeer konfyt bo-oor en versier met vars aarbeie.

KOMMENTAAR
Die GI van die kaaskoek is laag en omdat dit nie die tipiese krummel- of gebakte kors bevat nie, is die koolhidraat-inhoud van die gereg ook laer. Weens die bestanddele wat vir ’n tipiese gebakte kaaskoek gebruik word, is die vet-inhoud hoog.

Cindy Meiburg 4 cups jungle oats, 3 cups coconut, 1 cup cake flour, 1,5 cups sugar, half a teaspoon salt all mixed together. Dissolve 1 cup butter or margarine with 3 tablespoons golden syrup (I use honey). Mix 2 teaspoons bicarbonate of soda with 4 tablespoons of milk. Mix all together. Press into a large baking sheet. Flatten with a rolling pin. Bake about 15 minutes at 350F. Lekker.

Hawermout koekies. Bestanddele:
2 kop hawemout
1 kop klapper
3/4 kop suiker
1 kop koekmeel
1/2 teel koeksoda
1/4 teel sout
2 eetlepel stroop
1/2 kop botter/margerine
Metode:
Smelt botter en stroop. Meng al die droë bestanddele saam. Voeg gesmelte botter mengsel by droë bestanddele en werk deeglik deur. Druk ongeveer 1cm dik in n gesmeerde bakplaat. Bak 15-20 min in oond van 190 grade C. Sny in blokkies terwyl nog warm. Laat afkoel tot koud voor jy dit uit pan verwyder

375ml suiker. 125g botter. 30ml stroop. 500ml hawermout. 500ml klapper. 250ml ongesifte koekmeel. 1ml sot. 1eier geklits. 10ml koeksoda. Voorverhit oond 180C. Smeer rolkoekpan +/- 40x30x2cm. Smelt suiker, botter en stroop in groot kastrol oor lae hitte. Meng hawermout, klapper,koekmeel en sout in mengbak.
Laat suikermengsel bietjie afkoel roer dan die eier en koeksoda vinnig by, voeg meelmengsel by sodra koeksoda begin skuim, meng goed.
Druk krummels met spaan in pan vas. Bak 20 min tot goudbruin. Haal uit sny dadelik terwyn nog warm is in blokkies van 5cm of vinger koekies. Blokkies moet in pan afkoel. Ek gebruik my plat beskuitpan wat sommer klaar bekuitjies merk voor in pan gaan. Het dit baie gemaak heerlik ook vir koekverkoping n groot treffer!! (Beste v wenresepte – Annette Human)

Wafelresep

(omtrent 8 wafels)

2 koppies koekmeel
4 t bakpoeier
2 eiers
1 ¾ koppie melk
4 eetlepels gesmelte botter
Knippie sout

1. Skei die eiers
2. Klits die eiergele en melk saam.
3. Roer al die droe bestanddele by die gesmelte botter.
4. Klits die eierwitte styf.
5. Voeg die eierwitte by die mengsel.
6. Bak die wafels.
:)Wenk: Jy kan so 15ml suiker bygooi as jy wil, maar die stroop maak dit soet genoeg lekker eet

Ingredients
4 tablespoons butter
¼ cup buttermilk
2 large eggs
2 cups mashed potatoes
3 tablespoons chopped chives
½ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ teaspoon fresh ground black pepper
¼ teaspoon garlic powder
1 cup grated cheddar cheese
Directions
Melt butter in a small saucepan over medium-low heat. As the butter melts it will begin to crackle and pop. That’s the water evaporating out of the butter. Continue to cook the butter until the crackling subsides and the butter begins to brown a bit. The butter will smell nutty. Immediately transfer the browned butter into a medium bowl. Whisk in buttermilk and eggs until thoroughly combined. Add the mashed potatoes and 2 tablespoons chives and gently stir to combine.

In a small bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder. Add the dry ingredients to the wet ingredients. Use a spoon to mix until all of the flour is thoroughly combined. Try not to overmix the batter. Just stir it until the flour is combined.

Heat a waffle iron and grease if necessary.

Dollop batter (about 1/4 cup per waffle) into the waffle iron. Cook until golden on each side. The amount of time depends on your waffle iron. Remove waffles from the iron and place on a cooling rack to rest. The cooling rack will keep the waffles from getting soggy on the bottom as they cool.

Just before serving the waffles, turn oven to the broiler setting. Place waffles on a baking sheet and top with cheddar cheese. Place waffles under the broiler until cheese is melted, about 30 seconds to 1 minute. Remove from the oven, sprinkle with remaining chives and serve warm
