Meat Lasagna – Smile with salt

This Meat Lasagna with Fresh Tomato recipe could be the king of comfort foods


Ingredients
1 x 200 g packet riffled lasagna sheets (we used 14 sheets for our dish)
1 onion, chopped
2 T (30 ml) oil
500 g lean beef mince
2 t (10 ml) Ina Paarman’s Garlic Pepper Seasoning
1 t (5 ml) Ina Paarman’s Beef Stock Powder
1/2 cup (125 ml) cream (fat reduced is fine)
2 T (30 ml) water
3 large ripe tomatoes, peeled and thinly sliced
Ina Paarman’s Green Onion Seasoning
1 1/2t (7,5 ml) sugar
1 x 400 g Ina Paarnan’s Creamy Cheese Pasta Sauce
1/2 cup (125 ml) fresh milk
1 x 250 g smooth cottage cheese
1 egg

TOPPING
1/2 cup (125 ml) grated pecorino or parmesan cheese
1 T (15 ml) olive oil or melted butter
1/2 cup (125 ml) soft white breadcrumbs
Directions
Soak the lasagna sheets for 10-15 minutes in hot tap water. This dramatically improves the tenderness of the pasta and reduces the baking time of the lasagna to only 35 minutes. Spread sheets out on a clean dishcloth.

Brown the onion in the oil. Add the mince and stir-fry with a fork, pressing down to break any big lumps. Add Garlic Pepper seasoning and Stock Powder. Add cream and water. Simmer slowly for 10 minutes.

Slice the tomatoes and season with Green Onion seasoning and sugar. Pour the cheese pasta sauce into a medium bowl. Pour the milk into the empty pasta jar and shake well to get every bit out. Pour into the bowl, add cottage cheese and egg and mix to thin the sauce down.

Using a 30 cm x 24 cm ovenproof dish, spread � of the cheese sauce mixture into the dish. Layer with a 1/3 of the pasta sheets, then a 1/3 of the mince mixture, one sliced tomato and another � of the cheese sauce. Repeat layering twice more and end with a layer of cheese sauce mixture.

Mix the grated cheese, olive oil or melted butter and fresh breadcrumbs and sprinkle over the top. Bake for 35 minutes until nicely browned. Serve with a well-dressed Italian salad with Ina Paarman’s Classic Balsamic Vinaigrette Dressing or Caesar Salad Dressing and country style bread.

Lasagne

Braai saam:
500 gr maalvleis
1 uie opgekap
½ greenpepper en ½ red/yellow pepper (opgekap)
Sampioene – ek het 1 blikkie gebruik of so 150gr vars (gesnipper)
Gooi die volgende by en laat lekker deurkook
1 Koppie veggie mix
1 Blikkie Rhodes – Mexican style (jy kan enige geur gebruik)of blikkie tamatie en uie smoor
2 tamaties – geskil en in blokkies gesny
2 eetl chutney
2 eetl tamatiesous
Sout, peper en bietjie garlic
Maak lekker dik witsous.
Spuit jou bak met spray en cook. – Begin met die maalvleis, dan die witsous en dan die lasagne velle.
Herhaal tot mengselvleis op is – eindig af bo met lasagne velle, laaste witsous en lekker baie kaas.
Versier mooi bo-op met tamatieskywe, paprika en pietersielie.
NB: laat staan eenkant vir tenminste 1 uur +
Stel oond op 180grade en bak vir ongeveer ½ uur na 45 min tot goudbruin.

Blitsvinnige Lasagne

200 g rou maalvleis
20 ml tamatiesous
10 ml blatjang
10 ml bruin uiesoppoeier
1 pakkie witsous
1 lasagnevel
gerasperde cheddarkaas

Meng vleis, soppoeier, tamatiesous en blatjang.
Maak witsouspoeier aan volgens pakkie se aanwysings
Verdeel witsous en maalvleis in twee en pak in lae soos volg in lasagnebakkie:
Maalvleis, witsous, lasagnevel, maalvleis, witsous en laaste kaas.
Mikrogolf vir 7 minute op medium-hoog en laat staan vir 5 minute

Lasagne
Bestanddele:
1 pak lasagne velle
250ml gerasperde kaas
‘N dun witsous, ongeveer 4 koppies

Maalvleis mengsel:
500g maalvleis
1 pakkie minestrone soppoeier
1 blik tamaties, gekap(400g)
Halwe koppie water om soppoeier aan te maak

Metode:
Braai maalvleis in bietjie olie tot gaar. Voeg aangemaakte sop en bliktamaties by.
Gooi dun lagie witsous onder in oondbak, pak laag lasagne velle en gooi dan van die maalvleis mengels oor. Herhaal met witsous, lasagne velle, maalvleis en laaste witsous.
Gooi gerasperde kaas oor en bak vir 45min teen 180 grade 😉

Lasagne
125 g noedels
Sout na smaak
25 ml botter
1 ui, fyn gesny
1 wortel, fyn gesny
1 selderystingel, fyn gesny
375 g gemaalde beesvleis
125 g varkvleis, grof gemaal
125 ml witasyn ( 1/ 2 k )12.5 ml tamatiesous ( 1 E )
250 ml vleisekstrak ( 1 k )
250 g sampioene ( 1 k )
25 ml botter ( 2 E )
Neut
2 eiergele

WITSOUS
25 ml botter ( 2 E )
25 ml meelblom ( 2 E )
500 ml melk ( 2 k )
Sout en peper na smaak
Kaas, gerasper

METODE
Kook noedels in soutwater tot gaar en dreineer.
Soteer ui, wortel en se;derystingel in botter. Voeg vleis by en braai.
Voeg asyn, tamatiesous en vleisaftreksel by en kook vir 20 minute.
Braai sampioene in botter en geur met neut.
Voeg eiergele by, roer goed en plaas eenkent.

WITSOUS
Maak witsous van al die bestanddele.
Skep lae noedels, vleis, sampioene en witsous in `n gesmeerde vuurvaste bakskottel.
Sprinkel gerasperde kaas oor en bak vir 30 minute by 180 C ( 350 F )
LASAGNE
1 1/2 kg maalvleis
2 uie gekap
125 gram spek, gesnipper
Braai bruin in 15 ml margarien of olie
VOEG NOU BY:
10 ml Origanum
10 ml knoffelvlokkies
1 vol teelepel sout
1 Blik tamatiepuree
250 ml water met 1 blokkie ekstrak opgelos.
Kook alles saam tot lekker dik en souserig. As die sous vir jou te waterig lyk meng 1 eetlepel Maizena met bietjie koue water en kook dit saam vleis. Kook intussen 1 pak skulpienoedels sag en dreineer. As jy lasagnevelle gebruik moet dit nie kook nie. Jou vleis kan dan meer souserig wees want die velle sal vog absorbeer.
KAASSOUS:
Maak kaassous van:
100 gram margarien
100 ml meel
sout na smaak
850 ml melk
Voeg 1 1/2 koppie gerasperde kaas by.
Die hoeveelheid is genoeg vir n oondpan. gebruik 2 kleiner bakke vir jou gaste.
Pak nou n laag noedels, dan vleis dan kaassous oor. Herhaal nog n keer en strooi ekstra gerasperde kaas oor. Laat staan vir tenminste 30 minute. Bak 30 minute by 180 C tot regdeur warm.
Bedien met slaai en lekker vars rolletjies.
As jy dit gaan vries moenie die laag kaas oor strooi nie. doen dit net voor jy dit bak.

Beef Fillet with Porchini Sauce

Serves 4.

500g beef fillet
⅓ cup dried porcini mushrooms
sunflower oil
sea salt flakes and freshly ground black pepper
1 tbsp butter
2 shallots or 1 onion – very finely chopped
1 cup red wine
1 cup beef stock

Place the porcini in a shallow bowl and cover with ⅓ cup of just boiled water.
Leave to soak for 30 minutes.
Once softened, strain, reserving the liquid and rinse well to remove any residual grit.
Chop finely and strain the soaking liquid through a sieve lined with muslin cloth.
Cut the fillet into four 125 g pieces, rub each piece with sunflower oil and season well.
Heat a heavy based frying pan over medium high to high heat and add the pieces of fillet.
Cook for 5 minutes per side, turning only once.
Remove from pan and set aside to rest.
Add the butter to the pan and sauté the shallots over medium low to medium heat until softened but without colour.
Add the porcini and cook, stirring for 1 minute.
Add the porcini soaking liquid, wine and beef stock and simmer until reduced by half.
Serve the fillet medallions with the sauce spooned over the top

Beef Fillet

Ingredients:
(feeds 4)
1 kg piece of fillet steak
salt, pepper and mustard powder
all the ingredients for the sauce of

your choice:
mushroom
mustard
green peppercorn
teriyaki
monkeygland

Method:

1. Cut the fillet into 5 cm thick slices. This should give you about four slices per kilogram of fillet.

2. Grind salt and pepper onto all sides of each steak then dust mustard powder onto all sides of each steak as well. Wash your hands well then use your fingers to pat the condiments onto the steaks.

3. Braai over extremely hot coals for 8–10 minutes, making sure that all sides of each steak face the coals for at least 1 minute at a time. A 5 cm thick fillet steak will have at least four but possibly six sides.

4. Remove from the fire and let the steaks rest for a few minutes until serving. The time it takes for everybody to sit at the table, dish up their sides and pour the wine is probably enough.

5. Serve with your choice of sauce.
