Gekookte eier: When boiling eggs, add a pinch of salt to keep the shells from cracking.
Vars eiers: If you aren’t sure how fresh your eggs are, place them in about four inches of water. Eggs that stay on the bottom are fresh. If only one end tips up, the egg is less fresh and should be used soon. If it floats, it’s past the fresh stage
Sprinkle a little flour in the pan before adding oil when you fry eggs and they will not stick
Replace the egg for brushing the tops of pastry with custard powder mixed in milk or water

How to Freeze Egg Yolks
Place one egg yolk in each ice cube cavity of a clean ice cube tray. Add a pinch of salt to each yolk (if you plan to eventually use them in savoury recipes) or a pinch of sugar (if you will use them in sweet recipes). Freeze overnight until solid, then transfer to an airtight freezer bag.
To use, thaw in refrigerator and then mix well. They will keep in the freezer for up to three months.
Leftover egg yolks can also be refrigerated for 3-4 days.
How to bake large amount of eggs at one time: Lightly grease muffin tins + crack one egg in each well. Stick these in a 350 degree (175grade C) oven for about 15-20 minutes.
How to easier peel a hard boil egg: Add ½ tsp of BAKING SODA (KOEKSODA) to the water, it will make the egg shell easier to peel.
Gekleurde gevulde eiers
Om eierwitte te kleur – Kook eiers tot gaar, dop af en halveer – haal eiergele uit. Gooi in ‘n glas, 3 druppels koekkleursel en 1tl asyn, laat le in watermengsel tot jy sien dit is die kleur wat jy verlang. Meng eiergele met mayonaise, sout peper, mosterd, jou keuse, spuit terug in halwes en sprinkel paprika of pietersielie oor !!
Marbel effek eiers
Kook eiers tot hard, kraak eiers – sit in
plastieksakkie, gooi koekkleursel oor en vryf oor die eiers, los vir ‘n rukkie,
spoel af onder lopende water en dop af.
Easy Deviled Eggs:
Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up.
