Sjokolade sous
100ml gouestroop,150ml kakaopoeier,1blik kondensmelk,5ml vanilla. Verhit stroop effe,voeg kakao by en meng goed,voeg kondensmelk en vanilla by.

Karamel sous
250ml room,30ml stroop,65ml strooisuiker,5ml mielieblom,koue water. Verhit als behalwe mielieblom en water oor lae hitte tot suiker opgelos is. Laat prut vir +-15min tot karamel kleur. Meng mielieblom met bietjie water tot gladde pasta vorm. Voeg by sous en laat verder prut tot sous effe verdik.


GLACE ICING for doughnuts
Enough for about 15 buns or doughnuts
175g icing sugar
2-3 tablespoons hot water

Sieve the icing sugar into a bowl and mix in the water a little at a time. Make it thick enough to coat the back of a spoon but thin enough to flow easily. Use the icing at once because it sets quickly.
Vanilla glace – add ¼ teaspoon vanilla
Chocolate glace – Sieve 3 level teaspoons of cocoa with your icing sugar. Add a few drops of vanilla.
Set the buns/doughnuts on a wire rack and pour the icing onto it, let it run evenly down the sides. Leave the iced buns/doughnuts for at least an hour – or the icing will crack


500ml witbroodmeel
5ml sout
1x10g droë gis
30ml botter
1 eier, geklits
170ml warm melk

Sif meel en sout saam en voeg gis by. Vryf botter in meel tot dit soos broodkrummels lyk. Meng die eier en melk en voeg by die meelmengsel. Meng tot ‘n deeg en knie vir 10 minute tot deeg glad en elasties is. Laat die deeg vir 30 minute rus.
Knie deeg af, maak plat en vorm doughnuts (my man ht vir my ‘n doughnut cutter gemaak wat BAIE lekker werk!). Laat die doughnuts rys vir 20 minute. Bak in diep olie tot goudbruin aan albei kante. Dreineer op papierhanddoek en rol in strooisuiker.

Lemoen doughnuts

1kop suiker
3 kop meel
2tl bakpoeier
½ tl koeksoda
½ tl sout
3 eiers
1 eetl olie
1 kop lemoensap
1 eetl gerasperde lemoenskil
Sit droe bestandele saam – Klits eiers goed, voeg olie, lemoensap en skil by.
Voeg alles bymekaar en meng goed.
Drup lepels vol in pot met warm olie en bak tot ligbruin en gaar.
As uithaal rol dadelik in suiker/klappe

Slap doughnut deeg vir DOUGHNUT MASJIEN

1 ½ k meel
½ k strooi suiker
1 ½ t bakpoeier
125 g botter, gesmelt
¾ kop melk
1 geklitste eier
Meng al die bestandele. Gooi in beker. Spray machine. Gooi deeg in en bak 6 min tot bruin.



Mini Dougnuts

4x250ml koekmeelblom
250ml suiker
30ml bakpoeier
2 eiers, geklop
250-300ml water
125ml rosyne
750ml (om in te braai)
Om in te rol:
Meng 500ml suiker en 30ml fyn kaneel

Meng meel, suiker en bakpoeier in ‘n mengbak. Klop eiers en water, voeg by meelmengsel en meng goed. Roer rosyne by. Verhit die olie tot warm en skep elke keer ‘n eetlepel van die beslag in die warm olie. Braai bolletjies alkant tot goudbruin. Moenie meer as 4 bolletjies gelyk braai nie. Skep met ‘n gaatjieslepel in uit, dreineer oortollige olie en rol in kaneelsuiker. Bedien.
Lewer sowat 30 bolletjies. Oliebolletjies moet nie lank gebêre word nie, want dit word gou sag


3 ½ koppies koekmeel
1 eetlepel bakpoeier
1 teelepel kaneel
3/4 teelepel sout
½ teelepel nutmeg
1/3 koppie melk
½ koppie gesmelte botter
4 eiers geklits
2/3 koppie suiker
Sonneblom olie vir braai
Kaneel en suiker mengsel vir strooi

Meng meel, bakpoeier, kaneel, sout en nutmeg.
Gebruik ander bakkie en meng melk en gesmelte botter.
In ander bakkie – klits eiers en suiker tot room met elektriese klitser (so 5min lank) (ek sit dit in my Food Processor)
Gooi nou die melk mengel by die suiker en room mengsel en roer goed met lepel.
Voeg nou die meel mengsel by en roer alles goed.
Maak mengbak toe met clingwrap en plaas in yskas vir 2 ure.
Die deeg is effens sticky
Strooi oppervlakte effens met meel.
Rol deeg uit – so 1.5 – 2 cm dikte
Druk sirkels – (groot Mayonaise bottel werk goed)
Druk binne sirkel – (shooter glasie werk goed)
Braai in warm olie – so 2 – 2.5 minute draai halftyd om totdat hulle goudbruin is
Jy kan so 2-3 gelyk braai
Plaas op servet om olie te dreinneer
Gooi die suiker kaneel in ‘n sakkie
Plaas die warm doughnuts daarin en skud
Daar behoort so 15 uit een resep te kom


Mini hot cross bun doughnuts
Makes 2460g butter or margarine
420g cake flour
1 tsp salt
50ml sugar
1 tsp mixed spices
1 tsp ground cinnamon
1 tsp mixed peel (optional)
10g Instant dry yeast
1 egg, beaten
200ml warm water
½ cup raisins (or chocolate chips)

¼ cup flour
1 tbsp oil
2 tbsp water

Oil, for deep-frying
Castor sugar, to dust

Rub the butter into the flour and mix in salt, sugar, spices and mixed peel, if using. Add the yeast and mix. Beat the egg and warm water together and add to the dough. Mix to form a soft dough then knead for 5-10 minutes until smooth and elastic.
Divide into 24 pieces and roll into balls. Place on a lightly floured surface, cover and allow to rise until doubled in size. Mix the flour, oil and water together and place in a piping bag. Pipe crosses onto the buns. Heat a large pot of oil to 180C and fry the doughnuts, in batches until golden and puffed. Remove from oil and immediately dust in castor sugar.

Quick Doughnuts

500 g Golden Cloud Scone Mix
65 g butter
200 ml milk
1 egg
Oil for deep fat frying
420 g castor sugar

Rub the butter into the Golden Cloud Scone Mix until mixture resembles breadcrumbs.

Beat the egg and milk together and cut into the dry mixture with a palette knife until mixed through.

Place dough onto a lightly floured surface and lightly press out into a 15 mm thickness.

Cut into shapes using a cookie cutter. Cut a hole in the centre of each shape to form the doughnuts.

Preheat the oil in a large heavy-based saucepan and add the doughnuts in batches.

Fry until cookies are golden in colour.

Remove from oil with a slotted spoon and place on paper towel to drain.

Allow to cool slightly before rolling in the castor sugar.


Cinnamon Sugared Drop Doughnuts
1 & ½ cups Flour

1/3 cup sugar
2tsp baking powder
½ tsp salt
½ tsp nutmeg
½ cup milk
2tbs cooking oil
½ tsp vanilla essence
1 egg

For dusting…
½ cup sugar
1tsp cinnamon

Oil for frying

Heat cooking oil to 180 degrees. In large bowl, combine first 5 ingredients. In small bowl, blend milk, 2 tablespoons oil, vanilla and egg. Add milk mixture to dry ingredients; stir with fork just until dry ingredients are moistened. Drop by teaspoonful’s into hot oil, 5 or 6 at a time. Fry 1 to 1 1/2 minutes on each side until deep golden brown. Drain on paper towels. Mix sugar and cinnamon on a plate or a shallow bowl; roll warm doughnut balls in mixture. Makes about 3 dozen.

Notes: Use the smallest spoons you have and pull them out of the oil as soon as they turn golden. Ideally, cook them low and slow, in hot oil but not so hot that only the outsides brown.
Drain only briefly before rolling them in the cinnamon sugar. I used very fine caster sugar to make the cinnamon sugar.
Wait a while before cracking these open as the residual heat will continue to cook any uncooked batter in the middle.

Strawberry Baked Mini Donuts recipe

For the Donuts
1 Cup whole wheat flour
1 Cup unbleached all-purpose flour
1/3 Cup granulated sugar substitute or sugar
1 1/2 tsp baking powder
3/4 Cup non-fat buttermilk
2 eggs
1/4 Cup honey
2 tbsp butter, melted
1 tsp vanilla extract
2/3 Cup strawberries, mashed with fork

For the Glaze
2 large strawberries
about 1 Cup confectioner’s sugar
1/4 tsp fresh lime juice
Preheat oven to 180C. Spray donut pan with non-stick cooking spray.
In a medium bowl, combine flours, sugar substitute, and baking powder. In a small bowl, mix together the buttermilk, eggs, honey, butter, and vanilla. Add the wet ingredients to the dry ingredients and stir until well-combined. Stir in mashed strawberries.
Spoon batter into a pastry bag or a ziplock bag with the corner snipped. Pipe batter into a donut pan or mini muffin pan. Fill about 2/3 full.
Bake for 5-7 minutes or until donuts start to turn light golden brown.
Allow to cool for a couple of minutes in the pan before removing to a wire rack to cool completely.
While the donuts are cooling, prepare the glaze.
In a small bowl, beat the strawberries with a hand mixer until well mashed. Add the confectioner’s sugar and lime juice. Beat until smooth.
Dip cooled donuts in glaze and allow to harden.
Store left-over glazed donuts in the refrigerator, if there are any left!
