Ingredients

1 kilo of pineapple, already chopped in small pieces

300 g onions, chopped finely

8 tblsp balsamic vinegar or  white wine vinegar

250 g sugar

1 tsp salt

2 cloves of garlic, crushed with salt

1 tsp  cumin

2 tsp curry powder

1/2 tsp tumeric

1/2 tsp ginger powder

100 ml water on the side

Method

Put the chopped up pineapple and onions into a high pot, add all the rest of the ingredients (apart from the water) and bring to boil.

Let the chutney bubble gently for 30 to 40 minutes. Stir often so it doesn´t stick to the bottom. Depending on whether you cook it with or without a lid you might have to add some water, that´s what the water on the side is for.

Fill bottles and seal

Put the lid on the jar and place it on your worktop upside down for 10 minutes, then turn round and leave to cool off.

My chutneys taste better after having rested for at least a week.

Rasper 1/4 van die suurlemoen se skil af, net die geel nie die wit nie. Wit is baie bitter.

Gooi rys en water saam in ‘n pot

Halveer suurlemoen en druk die sap uit.

Verwyder pitte en gooi nou die sap by die rys asook die stukkies skil.

Bring rys tot kookpunt en laat kook vir 2 min en verlaag dan hitte tot die laagte stelling en los vir 15-20 min tot alle water absorbeer is.

•As jy nie suurlemoen het nie, gebruik net suurlemoensap.

Ingredients

  • 1 tsp olive oil
  • 1 clove garlic, finely chopped
  • 5 shallots, finely chopped
  • 2 tbsp Thai green curry paste
  • 3 tbsp fish stock
  • 400 ml can coconut milk
  • 20 raw tiger prawns, peeled (heads left on) and deveined
  • 2 tbsp chopped coriander
  • coconut rice, to serve

 

Method:

Heat the olive oil in a pan over a medium heat and fry the garlic and shallots for 2 minutes.

Stir in the Thai green curry paste and cook for a further 2 minutes, stirring continuously.

Add the fish stock and simmer for 15  minutes over a medium heat. Stir in the coconut milk and simmer for a further 15 minutes.

Add the prawns and cook for 10 minutes, until the prawns have turned pink.

Stir in the chopped coriander and serve with coconut rice.

Ingredients for about 2 litres of fresh peppers:
1 cup water
2 cups white sugar
1 cup white (wine/malt/spirit) vinegar
ready-mixed pickling spice (usually contains allspice, chilli, cinnamon stick. cloves, black peppercorns, coriander, mustard seeds, ginger, bay leaves, cardamom)
If you do not live in Africa you may want to consider some health and safety aspects, like using surgical gloves while handling the peppers. If you don’t you may experience some side effects after the cleaning operation – a burning sensation at the fingertips near the nails. Also keep your hands away from your eyes and other sensitive body parts (even after they were washed).
Cut off the stems and remove the seeds with a small spoon (this may take a while).
Sterilize jars and lids.
Pour boiling water over the peppers and let it stand for 10 minutes.
Drain well.
Mix all the ingredients and bring to the boil.
Add peppers to the boiling mixture and boil for 15 minutes.
Bottle while hot. Stir/poke with a spoon or skewer to ensure all trapped air escapes.
Wait about 2-3 weeks before enjoying.

METODE:
Sny jou stingels af en haal die pitte mooi uit
Laat in n oplossing van 4t Sout op 2k Water le oornag of n paar ure
Spoel more baie goed af en maak droog
Kook jou stroop vir so 5min. en gooi dan jou Peppedews by en kook weer 5min
Nie pap nie nog styf
Pak dan jou bottels lekker styf in en gooi jou stroop bo oor
Pak bo op n knoffel stukkie en n gemmer stukkie net soos jy wil en verseel jou bottels baie goed
Laat dit vir so 2-3 weke staan of langer voor jy dit gebruik
Baie lekker hoe langer dit staan

Vir almal wat Ingelegde Peppadews resep soek …. Vanuit die Avocado boekie …
Ingelegde Peppadews

Die resep kom uit die Avokado tydskrif.
Die rissies is enige dag net so lekker as die gekooptes miskien lekkerder. Laat staan ‘n paar weke voor dit gebruik word.

ASYN
500 ml water
500 ml appel asyn (of 375 ml appel asyn aangevul met gewone wit wyn asyn tot 500 ml)
200 g suiker
2 ml swart mosterd saadjies
5 ml piekel speserye
1 ui in kwarte gesny
1 knoffelhuisie skoongemaak

Plaas al die bestandele in ‘n kastrol bring stadig tot kookpunt roer om suiker op te los, kook vir ongeveer 10 minute oor medium tot lae hitte verwyder ui en knoffel.

INTUSSEN:
Maak 200 g pikante rissies skoon.
Sny die bo kant af en verwyder die pitte en die sagte wit weefsel versigtig uit, pak die rissies in ‘n skoon fles, giet die warm asyn oor en skud die bottel liggies om die lugborrels uit te kry vul op met asyn indien nodig, maak dadelik toe.

SOET PEPPADEW PIEKEL

3 kop vars peppadews – stingels en sade verwyder
1 kop bruinsuiker
1 kop kookwater
1 el heuning
1 tl growwe sout
1 kop wit druiwe asyn
koljander sade
heel swart peper korrels
heel anys saad
naeltjies

Sit peppadews, water, sout, suiker en heuning in ‘n pot.
Kook stadig vir 15 minute.
Gooi dan asyn by en kook nog 2 minute.
Skep in skoon bottels.
Sit ½ teelepel koljander saad, so 10 peper korrels, ½ teelepel anys sade, en 2 naeltjies in elke bottel.
Maak seker die peppadews is tot bo toe met stroop.
Draai bottels onderstebo tot koud.
Bere in yskas tot benodig.

800ml Tamaties, ontpit en gemaal
400ml Pepperdews, gemaal, met pitte
160ml Suiker, of na smaak
3 Uie, fyngesny
Sout na smaak

Kook alles saam vir 60-90 minute, steriliseer flesse en bottel warm.
Heerlik saam met enige vleis.

3k Pepperdews, heel en ontpit

Peperkorrels, Lourierblare

Kook die pepperdews, suiker,asyn en sout stadig vir 15 minute.
Skep peppedews in gesteriliseerde flesse, sit pepperkorrels en lourierblare by, gooi stroop oor en seel.

As jy die pepperdews ontpit, kan jy die pitte in ‘n bakkie laat droog word en dan in saaibakkies plant om sodoende pepperdew boompies vir jou tuin te kry, dit groei maklik en begin al in die 1ste jaar dra!

Verhit stroop tot kookpunt

Skoonmaak van peppadews.
Sny die boonste deeltjie waar die stingel aan is versigtig af en haal die pitte met die steeltjie van ‘n teelepel uit, werk versigtig dat dit nie breek nie.
Kook vir 1 min in kokende stroop en haal uit.
Pak bottels vol en gooi stroop bo-oor tot vol en verseel.

Gooi oor bietjie garlic, tiemie, basil, roosmaryn, sout gemaalde swartpeper, mixed hetbs, enige iets wat jy wil oorgooi, en ‘n lekker klomp olyfolie en bietjie balsamic vinager. Roast in die oond tot sag en gaar. Skud dit elke nou en dan sodat dit nie vasbrand nie. Braai nou in ‘n pan die pitte tot gaar. As opdien, strooi die pitte, vars pietersielie en gekapte spruituie bo-oor.

 

BOTTERSKORSIE SLAAI

Sny jou butternut in skywe – met skil aan. Verwyder pitte en hou eenkant
Bak nou jou butternut in die oond met bietjie sout en peper tot gaar. As gaar is – sit net onder die grill dat dit so ‘n effe crispy bruin tekstuur kry.
Braai intussen jou pampoenpitte in klein bietjie vlak olie tot gaar. Dit moet nie diep olie wees nie, jy moet dit amper skroei.
Laat afkoel, en pak in slaaibak.
Neem ‘n paar stukkie  spruit uie – in stukkies, so 1 uie in ringe, ‘n paar peppadews, olywe en blokkies feta-kaas, dun gekerfde biltong en  “toss” die alles bo-oor die butternut en ook die pampoenpitte.

Stip  nou klontjies botter bo op stukke butternut en bak (onbedek) tot sag en gaar
As jy sien die botter is te min tydens die bakproses, sit of nog botter op of gooi bietjie olyfolie oor

GEBAKTE BOTTERSKORSIE OONDSKOTTEL

1 middelslag botterskorsie, inblokkies gesny
gegeurde seesout
30ml botter
125ml fetakaas, in blokkies gesny
4 jong uitjies met groen lowwe,fyngekap
3 eiers, geklop
250 ml karringmelk, room of suurroom.
Stoom die botterskorsie tot sag. Geur met sout en voeg die botter by. Voeg fetakaas en uitjies by en meng liggies deur. Skep mengsel in n gesmeerde
oondskottel. Klop die eiers en karringmelk of room saam en giet oor die groente. Bak in n voorverhitte oond by 180C (350F) vir 35 tot 40 minute
of tot mooi bruin en pofferig. Sit voor met n tamatie-en-uieslaai en n bros groenslaai as n vegetariese ete of as n bygereg

 

GEBAKTE BOTTERSKORSIE

1 pak spek, fyn gesny
1 pak sampioene, fyn gesny
2 uie, fyn gesny
kaas

Braai die drie bestandele tot gaar, geur met sout en peper. Neem vier botterskorsies, kook gaar maar nog n bietjie hard sny oop haal pitte uit.Skep gebraaide bestandele in skorsie, sit lepeltjie botter in en rasper kaas oor en bak in oond tot gesmelt en bietjie bruin is. Geniet saam met enigeiets.

(Lekker saam met Sondag kook kos, dis gouer as pampoenkoekies maar net so lekker)

 

 ROAST BUTTERNUT

BUTTERNUT SKYWE MET KNOFFEL

Saam met braai werk die ook lekker. Sny jou butternut in dik skywe – met skil aan. Smeer lekker homp botter op en garlic flakes, sout en gemaalde swartpeper – sny ‘n ui in skywe en sit die skyf ui bo-op die butternut. Maak toe met foelie en maak gaar op die kole of in die oond.

 

SPINASIE EN BUTTERNUT GEREG


1 pak spinasie
1 Butternut in blokkies gesny
1 Pakkie Bruin uiesoppoeier
400ml Room

In ‘n bak gooi buttnut blokkies, dan spinasie (alles rou)
Meng room en soppoeier en gooi bo-oor. Gooi paar heel kersie tamaties oor.

Bak met foil oor by  180’C vir so 30 min of tot butternut gaar is(moenie te lank bak nie ander sal die butternut mash) Roer lekker deur en bak verder oop tot lekker bruin room dik is.
Laat bietjie afkoel en room sal lekker dikkerige sous maak

GEVULDE BOTTERSKORSIES

1 Groot botterskorsie, in die lengte gehalveer en ontpit
sout en swartpeper na smaak
45 ml olie
1 ui gekap
2 knoffelhuisies, gekneus
500 g gemaalde beesvleis
5 ml speserye
2 snye volgraanbrood, gekrummel
1 eier geklits
1 x 65g blikkie tamatiepasta
sout en peper na smaak
5 ml gedroogde basiliekruid

Voorverhit oond tot 160*C. Geur die botterskorsie met sout en peper. Voeg die maalvleis en gemengde speserye by en verbruin dit. Meng die maalvleis, broodkrummels, eier en tamatiepaste goed. Geur met sout, peper en basieliekruid. Skep die vleismengsel in die uitgeholde skorsie en plaas die op bakplaat. Bedek met foelie {blink kant na binne}. Bak dit vir ongeveer 40-45 minute tot botterskorsie sag is.

Hierdie afdeling het ek op my PC gekry wat ek al die afgelope 3 jr nie meer gebruik nie, so ek kan glad nie ‘n verwysing opsit van waar ek dit gekry het nie

LET WEL: Die is slegs resepte wat ek dink Copy Cat resepte is van KFC – want soos hulle se  – THE COLONEL’S SECRET RECIPES -en die  sal defenitief nie uitgedeel word nie …. of wie weet – dalk is dit die WARE JACOB – Besluit maar self…..

Van die produkte sien ek is hier en daar iets wat nie beskikbaar is in SA nie – ek kan ongelukkig nie vir julle se waarmee om dit te vervang nie, omdat ek nie die resepte ken nie.

KENTUCKY FRIED CHICKEN COATING MIX 

3 c. self-rising flour

2 pkgs. Italian dressing

1 tbsp. paprika

2 envelopes tomato cup-a-soup

1 tsp. salt Mix all ingredients together. Coat chicken with flour mixture. Lay on cookie sheet. Pour melted butter over all. Bake 1 hour at 350 degrees.

 KFC Extra Crispy chicken

1 whole frying chicken, cut up
6−8 cups shortening
Coating:
1 egg, beaten
1 cup milk
2 cups all−purpose flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon MSG
1/8 teaspoon Garlic Powder
1/8 teaspoon Baking Powder
Trim any excess skin and fat from the chicken pieces. Preheat the shortening in
a deep−fryer to 350 degrees. Combine the beaten egg and milk in a medium bowl.
In another medium bowl, combine the remaining coating ingredients (flour, salt,
pepper and MSG). When the chicken has marinated, transfer each piece to paper
towels so that excess liquid can drain off. Working with one piece at a time, first
dip in egg and milk then coat the chicken with the dry flour mixture, then the egg
and milk mixture again, and then back into the flour. Be sure that each piece is
coated very generously. Stack the chicken on a plate or cookie sheet until each piece
has been coated. Drop the chicken, one piece at a time into the hot shortening. Fry
half of the chicken at a time (4 pieces) for 12−15 minutes, or until it is golden brown.
You should be sure to stir the chicken around halfway through the cooking time so
that each piece cooks evenly. Remove the chicken to a rack or towels to drain for
about 5 minutes before eating.

KFC BBQ Baked Beans
2 15−ounce cans small white beans (with liquid)
2 tablespoons water
1 tablespoon cornstarch
1/2 cup ketchup
1/2 cup dark brown sugar
2 tablespoons white vinegar
4 teaspoons minced fresh onion
2 pieces cooked bacon, crumbled
1/2 teaspoon dry mustard
1/4 teaspoon salt
dash pepper
dash garlic powder
Preheat oven to 350 degrees. Pour entire contents of two 15−ounce cans of beans
into a covered casserole dish. Combine the water with the cornstarch in a small bowl
until cornstarch dissolves. Stir mixture into the beans. Stir the remaining ingredients
into the beans and cover the dish.
Bake for 90 minutes or until sauce thickens. Stir every 30 minutes. Let beans sit for
5 to 10 minutes after removing them from the oven before serving. Serves 4 to 6.

2 1/2 cups Water
1/4 cup Vinegar
1 tablespoon Sugar
3 teaspoons Pepper
2 tablespoons Butter
3 teaspoons Salt
1/4 cup Chopped onion
1 Clove garlic, minced
1 teaspoon Red pepper
2 teaspoons Chili powder
1 teaspoon hot pepper sauce
1 teaspoon Dry mustard powder
3 tablespoons Worcestershire sauce
Combine all ingredients in a saucepan. Bring to a boil, stirring constantly. Reduce
heat and simmer for 5 minutes. Cool overnight, warm before using. Start basting
meat with this at the beginning of the cooking process. Baste and turn until pork
registers 170 degrees on a meat thermometer (takes about 20 minutes for country ribs.)

1/2 cup butter
1/4 cup club soda
1 beaten egg
3/4 cup butter milk
1 teaspoon salt
5 cups Bisquick Biscuit Mix
Preheat the oven to 450F. Combine all of the ingredients. Knead the dough by
hand until smooth. Flour your hands Pat the dough flat to 3/4−inch thickness on
waxed paper and punch out biscuits with a biscuit cutter.Bake on a greased baking
sheet for 12 minutes, or until golden brown, brush with melted butter when they
come out of the oven. Makes 18 Biscuits.

8 cups finely chopped cabbage (about 1 head)
1/4 cup shredded carrot (1 medium carrot)
2 tablespoons minced onion
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice
Be sure cabbage and carrots are chopped up into very fine pieces (about the size
of rice). Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar,
and lemon juice in a large bowl and beat until smooth. Add the cabbage, carrots,
and onion, and mix well. Cover and refrigerate for at least 2 hours before serving.
Serves 10−12.

1 cup flour
1 cup cornmeal
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup half and half
1 egg, lightly beaten
Preheat oven to 400. Grease muffin tins for 9 muffins.
In a large bowl, stir together the flour, cornmeal, sugar, baking powder,
and salt. Add butter and mix until crumbly. In a separate bowl, mix the
half and half with the egg and fold in the liquid mixture into the flour
mixture. Spoon into tins filling to the top. Bake about 25 minutes.

1 tablespoon vegetable shortening
5 tablespoons all−purpose flour
1 can Campbell’s chicken broth (plus 1 can of water)
1/4 teaspoon salt
1/8 teaspoon MSG or Accent Flavor Enhancer
1/8 teaspoon ground black pepper
First make a roux by combining the shortening with 1 1/2 tablespoons of flour in a
medium saucepan over low heat. Heat the mixture for 20−30 minutes, stirring often,
until it is a dark chocolate color. Remove the roux from the heat, add the remaining
ingredients to the saucepan and stir. Put the saucepan back over the heat, turn it up
to medium and bring the gravy to a boiling. Reduce heat and simmer for 15 minutes,
or until thick. Makes about 3 cups.

20 Chicken Wings, tips removed
2 cups flour
2 eggs
2/3 cup milk
1 Bottle KC Masterpiece Original BBQ Sauce
1/4 cup honey
oil for deep frying
Wash the chicken wings, then remove the wing tips; cut the other two pieces in half.
Shake off the excess water. Place the eggs and milk in a bowl and mix well. Set aside.
Mix together the BBQ sauce and honey. Set aside. Put the flour into a bag, then shake
the wings in it, to lightly coat. Roll the wings in the egg wash, then toss them back into
the bag. You want a fairly heavy coating of flour so the BBQ sauce has something
to hang onto. Repeat 2−3 times.
Heat a large skillet or use your deep fryer. Heat oil until it’s very hot (around 350F).
Fry the wings until they’re golden brown. Remove and drain on paper towels.
Preheat oven to 325F.
Dip each wing in the BBQ sauce and place on a greased cookie sheet. Make sure the
pieces don’t touch each other. Bake for 15−20 minutes, until they no longer look shiny.

KFC Macaroni and Cheese

6 cups water
1 1/3 cups elbow macaroni
4 ounces Velveeta cheese
1/2 cup shredded cheddar cheese
2 tablespoons whole milk
1/4 teaspoon salt
Bring water to a boil over high heat in a medium saucepan. Add elbow macaroni
to the water and cook it for 10 to 12 minutes or until tender, stirring occasionally.
While the macaroni is boiling, prepare the cheese sauce by combining the remaining
ingredients in a small saucepan over low heat. Stir often as the cheese melts into a
smooth consistency. When the macaroni is done, strain it and then pour it back into
the same pan, without the water.Add the cheese sauce to the pan and stir gently until
the macaroni is well−coated with the cheese. Serve immediately while hot.

1 lb Elbows Macaroni
1/4 cup Carrots, chopped fine
1 tbsp Minced Onion
1/4 cup Celery, chopped fine
2 cups Food Service Cole slaw Dressing
dash White Pepper
Cook macaroni noodles to package directions. Drain and allow to cool.
In a large bowl combine all of above. Refrigerate for 2 hours.

KFC Mashed Potatoes

2 1/2 cups Idaho Potato Flakes
1 stick Margarine
2 tablespoons Butter
2 1/2 cups Hot Water
3/4 cup Milk
1 teaspoon salt
Heat water add butter and margarine till melted. Add the salt and cook for 2 minutes.
Add the flakes and mix till it looks like regular potatoes. Add milk to proper consistency.
Serve with gravy. Serves 6

6 cups Crisco Shortening
1 eggs well beaten
2 cups Milk
2 cups Flour
2 teaspoons ground pepper
3 tablespoons salt
1 teaspoon MSG
1/8 teaspoon Garlic Powder
1 dash paprika
2 Frying Chickens cut into 6 pieces
Place shortening into the pressure cooker and heat over medium heat to the shortening
reaches 400F. In a small bowl, combine the egg and milk. In a separate bowl, combine
the remaining six dry ingredients. Dip each piece of chicken into the milk until fully
moistened. Roll the moistened chicken in the flour mixture until well coated. In groups
of four or five, drop the covered chicken pieces into the shortening and lock the lid.
When pressure builds up cook for 10 minutes.

3 large potatos peeled and cut
2/3 cup frozen peas
1 large can chicken drained
4 carrots cut small
2 cans of cream of chicken soup
1 can milk
2 Tablespoons Onion
1 dash Msg
Cook onions, potatoes, and carrots till totaly cooked in boiling water. Drain the
vegetables. Add the chicken then the chicken soup mix well the mixture should
be thick but not too thick. For the crust make the biscuit recipe in this book and
roll thin. Center the crust on top of the pie and brush the top with butter.
Bake at 350F for 20 to 25 minutes until the top is nice and brown.

KFC Potato Salad

2 pounds russet potatoes
1 cup mayonnaise
4 teaspoons sweet pickle relish
4 teaspoons sugar
2 teaspoons minced white onion
2 teaspoons prepared mustard
1 teaspoon vinegar
1 teaspoon minced celery
1 teaspoon diced pimentos
1/2 teaspoon shredded carrot
1/4 teaspoon dried parsley
1/4 teaspoon pepper
dash salt
Lightly peel the potatoes (you don’t have to get all of the skin off) then chop them
into bite−size pieces and boil in 6 cups of boiling, salted water for 7−10 minutes.
The potato chucks should be tender, yet slightly tough in the middle when done.
Drain and rinse potatoes with cold water. In a medium bowl, combine remaining
ingredients and whisk until smooth. Poured drained potatoes into a large bowl.
Pour the dressing over the potatoes and mix until well−combined. Cover and chill
for at least 4 hours. Overnight is best

5 Baking potatoes cut into Wedges
1 cup Milk
1 egg
1 cup flour
2 tablespoons salt
1 teaspoon pepper
1/2 teaspoon MSG
Preheat shortening in to 375F. Cut the potatoes into 16 to 18 equal side wedges.
Mix the egg and milk till well blended in a big bowl. Mix the dry ingredients into
a large bowl. Put some potatoes in the milk and egg then into the flour mixture
until well coated. Fry in fryer for 5 minutes.

KFC Rotisserie Style Chicken

1/4 cup Oil
1 tablespoon Honey
1 tablespoon Lime juice
1/4 teaspoon Paprika
Season salt
4 Chicken breast halves with skin
Mix all ingredients well in saucepan and warm just to melt honey. Arrange 4 chicken
breast halves, skin−side−up in a square baking dish or pan, sprayed with Pam. Bake
uncovered at 400F about 35 to 40 minutes, basting chicken without turning them,
3 or 4 times during baking or until nicely browned. Immediately upon removing
from oven, seal baking dish tightly in foil and let stand 15 to 20 minutes before serving.
